Seared Scallops with lemon, garlic and parsley

To make the dressing mix together lemon juice, olive oil and a little honey.

Mix up parsley and crushed garlic in a second bowl

Sear the scallops on each side for 1 minute in a frying pan

Halve some baby tomatoes and place them in a bowl with a couple of handfuls of rocket

Once the scallops are seared on both sides, put them into the bowl with the tomatoes and rocket, drizzle over the lemon dressing and finish with the parsley and garlic.
