One of the main principles of the Metabolic Balance programme which has been showing fantastic results for weight loss, is that you cannot lose weight efficiently if you don't give your body what it needs in terms of nutrients. In my experience, people find it very difficult to get sufficient vegetables into their diets. Raw veggies are such as fantastic source of vitamins, minerals and anti oxidants. One great way to get these foods into your lunch, it to create a delicious coleslaw - really easy to prepare, will keep in the fridge for a few days, goes really well with cold fish, poultry to brighten up your salad:
Finely chop or grate up some raw vegetables (use a food processor if you have one). I really like red cabbage, carrot, radish, celery, gherkin and onion. Put the chopped veggies into a container and prepare the dressing. I use: yoghurt or soy milk, whole grain mustard and lemon juice or cider vinegar and chopped parsley. Add the dressing to the veggies and you have a delicious coleslaw which will keep fresh for days. For extra flavour try adding sultanas or dried cranberries!
